Niigata Rice Crackers (2008-02-09)

Y-san came back from visiting her hometown and brought me gifts to thank me for taking care of her cats while she was away.  Of the noodles, rice crackers and marinated salmon flakes, we love the crackers the most.  They were absolutely the best we've ever eaten.  Their light, almost fluffy texture was accented with roasted soy beans.  I couldn't stop eating them all, in one sitting!

If you ever come across this particular kind of senbei from Niigata (kanji), do give it a try.
