It Will Change Your Concept Of What Tender Beef Means (2008-12-27)
Bought a bunch of meat including the cheek meat and the shop gave us two Korean instant noodles free
Chicken, ox tail, pork ribs, cow cheek
Tons of connective tissue and sinew and stuff run through the meat. Because the cow constantly chews food and the cheeks get plenty of exercise, this cut of meat is very flavorful
I used one and a half cheek to make stew
You need a saw to cut it into strips!
Just melt-in-your-mouth soft, YUM YUM YUM
Since I opened a bottle of red wine for the stew, I used the leftover wine to make poached pear for dessert. I got the recipe from The Early Show (Christopher Kimball of America's Test Kitchen)
It's pretty delicious and some vanilla icecream would've been a perfect accompaniment for it
