Coconut Chicken Soup (2012-06-01)

Fresh coconut is such a rarity in Tokyo

Drains out about 300ml coconut water from the eyes

Neatly cracked in halves

Use a peeler or a knife to peel the meat

Just three ingredients to make this soup

Lightly fry the onion before adding to water

Blanch chicken for a few minutes to remove scum

Prepped ingredients go into the pot of boiling water

Simple, tasty and healthy lunch

Rice with pearl barley

We never discard the meat in long soup, here we eat it with a dipping sauce of oyster sauce, maple syrup and water plus a chilled cucumber salad
