Fruit Leather (2013-03-03)

Have been having a lot of fun making fruit leather; and of course if you roll it up, it becomes fruit roll-up.  I'm amazed at how easy it is to make, all you need is fruit, lemon juice, optional (any kind of) liquid sweetener and an oven or dehydrator.

Canned and frozen fruit can go straight to the blender where fresh fruit might need to be cooked down.  I add apples to mine to give the leather body and lower the cost (apples are much cheaper than berries!) but you can use just one fruit in each batch.  The apples do need to be cooked till soft but that maybe the only cooking you need to do.

There isn't really a recipe for my leather, I generally use one apple to three or four cups of fruit.  Blitz the fruit till very smooth (strain the seeds out such as strawberries if you like but I don't bother), add juice of half a lemon (or less) and honey or molasses according to taste.  Spread it on a tray, 110C for 2-3 hours.  Cut into strips and enjoy!

*Sometimes I have to finish the strips in the dehydrator at 65C for 2-4 hours when the "batter" is too thick and they just need a bit more drying.
