So-so Basil Pancakes (2007-08-16)

Found a recipe for Chinese basil pancakes so I could use the glut of basil I have from my basil plant.  The steps for making these Chinese onion pancake-esque bread are shown in today's pictures if you are interested to take a look.  Since these pancakes use sweet potato starch (which I don't have, so I substituted it with corn starch) in the batter, there is a definite chewiness in them.

After comparing these basil pancakes with my own onion pancakes, I prefer the bready texture of the latter.  I think I'll go back to my onion pancake recipe and replace the chopped green onions with basil next time.
