Soft Bready Pizza (2008-04-22)

This is a bready kind of pizza made using a biga in the breadmaker.  You can knead it by hand, it just takes longer time.  But the biga and dough are extremely wet and sticky to knead, so proceed with patience if doing it by hand.  The pizza has a soft and tender crust, and in my humble opinion, quite delicious.

Biga
Put 135ml water, 106gm bread flour, and 1/3 tsp instant yeast in the bread machine.  Run the dough course.  When it is finished, switch off the machine and let the biga sit in it for 12hours.

Pizza dough
1.When the 12hrs is up, add 135ml water, 20ml milk, 215gm bread flour, 1.5tbsp olive oil, 1tsp salt, 1/3tsp sugar, and 1/6tsp instant yeast in the machine and run the dough course.  If your machine does not have the dough-rising function attached to the dough course, let the dough rise in a 30C environment after the kneading till it doubles.
2. When the dough has risen or when the dough cycle including risen time is done, remove the dough from the machine.  Divide into four, shape lightly into balls.  Cover, and let rest 10 minutes.
3. Flatten each ball with the ball of the hand and push the dough till it resembles a flat disc.  Let it rise again in 30C environment for an hour or so till double.
4. Flatten dough slightly in the center leaving a border of risen dough.  Brush surface with olive oil, top with your favorite toppings, bake in a preheated oven of 240C for 10 minutes.

I didn't use tomato based sauce on mine this time, I simply topped it with caramelised onion, rosemary and cheese.  It was delicious.
