Mock Duck Confit (2013-08-28)
I used to cure duck legs for about 24 hours in the dehydrater when I make Chinese salted duck. I've recently done it in 12 hours and the result was pretty much the same.
After the dehydrating is done, I steam the legs, let them cool and panfry them till the skin is super crispy. Mock duck confit in no time at all.
