Chewy Peanut Candy, Chinese Style (2009-06-06)

After telling you not to over roast the peanuts, mine got burnt...

Chewy maltose also goes well with crispy crackers

Weighing the ingredients

Boiling the sugars and water

Cornstarch slurry is added

Stir crazily

Peanuts and coconut are added

Dump it on to baking paper

Smooth it out

You can't peel off the paper cleanly when the mixture is still warm

Cooled

Cut into bite-sized pieces and they break off easily when chilled
