Lupini Beans (2011-10-13)
To prepare, soak beans overnight
and they plump up a bit in the morning
Then you boil them for an hour or so
till they are tender
Their skin slips right off like a fava bean
Then they are ready to be soaked
in brine (1Tbs salt in 1L water) for a week, changing brine daily till all their bitterness has leached out

Ready-to-use beans can be frozen for longer storage
After soaking the beans for seven days, they have no trace of bitterness and I used them in various dishes such as this sausage and tomato stew
