Bread Sticks (2008-01-26)
These breadsticks would have been perfect if I hadn't let them rise so long the second time. I let them rise 20 minutes more than the recipe says which was stupid of me. I forgot I was making breadsticks, not bread. They tasted great but the fat center part didn't get totally crispy like the two ends did.Grissini (makes 10)
Bread Flour 200gm, instant yeast 4gm, water 110ml, salt 4gm, sugar
6gm
1. Use bread machine or knead by hand till elastic and smooth, let
dough rise 60 minutes till double in size. If knead by hand, use
warm water.
2. Slightly roll risen dough into a ball and let rest for 15 minutes,
covered.
3. Roll dough into 25X20cm, cut into 10 strips. Cover and let
rise at room temperature (26-28C) for 25 minutes.
4. Brush sticks with beaten egg white, sprinkle with sesame seeds,
parmesan cheese or poppy seeds and bake them in 190C oven for 12
minutes, then 150C for 20 minutes.
