Crispy Homemade Pizza (2009-09-10)
This is the way I make my crispy-bottomed pizza at home, a method inspired by Mark Bittman awhile back when he made pizza on the stove. I did see Chris Kimball from America's Test Kitchen do it my way a few months later, but I beat him to it, haha!There's no need for fancy pizza stone and pizza peel, if you do it the way I do it, you'll have homemade pizza with very crispy bottom. Guaranteed! You can use store-bought pizza dough, homemade one or dough from a pizzeria if you're lucky enough to score some.
It's so simple, all you need to do is put the rolled-out dough in a
cast iron pan, add the toppings and heat it on medium heat on the stove
for 5 minutes till the bottom is crispy. Then you finish the
cooking in a 210C oven for 10 minutes (upper shelf). That's it.
