Korean Sweets, Hottoku (2010-03-12)

In Okubo, Koreatown near Shinjuku (kanji), these Korean pancakes are called Hottoku; although the box of instant mix I got has another name.  I'll have to ask a Korean the "real" name of these delicious chewy and crispy stuffed pancakes.

I couldn't find the instant mix in all the three large Korean grocery stores in Okubo, so I ordered one online from a Korean shop.  "But Houston, we have a problem."frrrrrre  There's no Japanese or English instruction!  I guesstimated all the steps and directions from the numbers printed on the box, har!

The result was actually very good.  The outside was crunchy, the pancakes were chewy like mochi (from the glutinous rice flour in the batter) and the center has that familiar yet unidentifiable spiciness (cloves? nutmeg? cinnamon?). 

Hints:

  1. Make the pancakes smallish cause they are very filling.
  2. I of course don't have that special Hottoku apparatus to flatten the pancakes, but my potato masher with wide slats work beautifully.
  3. Leftover freezes very well.
  4. Reheat thawed Hottoku on a dry pan over very low heat.  They get crispy this way.
